Potato Salad with a Crunch

This easier to digest potato salad is a win for me, especially when I need to fuel up before a writing session. In the summer months, you can trade in the traditional style potato salad with this version to give some variety.

Potato Salad

  • 2 pounds potatoes, peeled and diced

  • 1 garlic clove, minced

  • 1/4 cup roughly chopped fresh parsley

  • 2 tablespoons finely chopped green onion

  • 1/2 teaspoon mustard powder

  • 2 teaspoons fresh lemon juice

  • 1/2 cup thinly sliced radish

Optional Additions

  • 1/2 cup thinly sliced cucumber

  • 1/2 cup chopped asparagus, steamed or raw

  • Add 3 inches of water to a medium-sized pot, bring it to a boil, and add a steaming basket.

  • Place the potatoes in the basket, cover, and steam for 5 to 10 minutes, until tender. Remove and place in a bowl.

  • Add the radishes, garlic, parsley, green onion, mustard powder, and lemon juice. Mix well.

  • Add any additions you would like and if preferred, can replace parsley with another herb of choice.

  1. Potatoes—Rich in amino acids that inhibit viral growth. Potatoes are high in glucose which is what the liver relies on to keep strong, grounded and stable. The intense green pigment in parsley contains an alkaloid specifically for liver rejuvenation; tissue in the liver improves when exposed to these alkaloid compounds. Helps gallbladder sludge to empty. The phytochemical compounds in parsley settle at the bottom of the gallbladder, where the sludge lies, to do their good.

  3. Radishes—An antiviral food, that contains sulfur that pushes ENV away. Removes radiation form the thyroid and contains over 30 trace minerals.
